From a shared passion for good food and drink to a thriving local brand – JZT Ferments continues to grow. The Prague-based kombucha maker has just completed a major expansion with a new production site near the capital.
Regular readers of Prague Daily News may already be familiar with JZT Ferments, a Prague-based company specialising in high-quality fermented tea – better known as kombucha.
Founded five years ago by three friends with a shared passion for good food and drink, the company has quickly built a strong reputation in Prague and beyond. Its distinctive kombucha varieties have attracted a loyal following, and this summer marked an important milestone in its growth.

The original production site in Flora had reached its limits, prompting the team to move to a brand-new facility in Klecany, just outside the capital. After months of planning and preparation, the new factory is now fully operational.
Speaking to Prague Daily News, Zdeněk from JZT Ferments explained: “We’re really happy with our new place. The new bottling machine has significantly boosted our productivity. But some of our special-edition kombuchas are still bottled by hand, because for the automated line, we need to run at least 2,000 bottles at once.”

Visitors to the site might expect the distinct aroma of fermentation, but they’ll be surprised to find none. The air is clean and fresh, thanks to a high-end ventilation and filtration system. “Without that, we wouldn’t have received permission to operate here,” Zdeněk added with a smile.

For the planning of the production facility, they teamed up with Pavel Kunc, the architect who had already worked on projects such as Prague’s brewery pubs Dva Kohouti and Automat Matuška. JZT also shares another connection with Dva Kohouti; together they created a kombucha with flavours of wort, hops, and red currant. You can enjoy the creation directly at Dva Kohouti in Prague’s Karlín district, and soon it will also be available on JZT’s e-shop.

With the expansion, JZT Ferments is now preparing to explore new partnerships and distribution channels. For now, its kombucha can be found at local markets, events, cafés, and restaurants around Prague. Customers can also order easily online via Rohlik.cz.
Looking ahead, the company also plans to strengthen its presence in the corporate sector – offering bespoke editions for company gifts, events, and celebrations, complete with promo labels to make each bottle stand out.
