35 Years of Zátiší Group: Prague Hospitality Group Celebrates Anniversary with Classic Menus and Modern Pub Concept

The long-established restaurant group looks back on three and a half decades and is preparing a new chapter with “Bursa” in Prague’s Holešovice Market Hall

Zátiší Group is celebrating its 35th anniversary this year. Since its founding, the company has grown into the longest-established hospitality group in the Czech Republic and is regarded as one of the flagships of the country's fine dining scene.

The story began shortly after the Velvet Revolution. Founder and owner Sanjiv Suri first opened Café Museum, followed by the wine bar and Restaurant V Zátiší on Prague’s Liliová Street. With this, he laid the foundations for a brand that has been associated with outstanding cuisine, professional service and exceptional dining experiences for decades.

"We had a simple vision at the time: we wanted to bring the quality of food and hospitality to Prague that we had experienced in other parts of the world," recalls Suri. "Back then, a cup of coffee cost CZK 4.20 and our most expensive sandwich was less than CZK 6."

Over the following years, the group expanded well beyond its first restaurant. Its best-known establishments include Restaurant V Zátiší, Mlýnec and the former Restaurant Bellevue. At the same time, Zátiší Catering developed into one of the region’s leading event catering providers, serving clients across several European countries. With Fresh & Tasty, the group also established a division specialising in corporate and school catering.

To mark the anniversary, Zátiší Group is focusing on what it has become known for: exceptional culinary experiences. Its restaurants are serving special anniversary menus that bring back popular dishes from the group’s history in a modern interpretation. At Restaurant V Zátiší, which underwent a comprehensive refurbishment last year, guests can enjoy a special tasting menu featuring reimagined classics. At Mlýnec, Executive Chef Láďa Vaníček has created a selection of the restaurant’s most popular dishes.

At the same time, the group is looking ahead. After 35 years during which Zátiší Group has helped shape the Czech Republic’s fine dining scene, the next chapter is intended to appeal to a broader audience. With BURSA by Zátiší Group, the company plans to enter the premium yet more accessible dining segment.

The new concept is being developed in Prague’s Holešovice Market Hall and will offer a contemporary interpretation of the traditional Czech pub. The venue will accommodate up to 300 guests. Plans include open-fire cooking, an in-house bakery, premium dry-aged meat and tank beer. The concept draws inspiration from both the history of the market hall and the spirit of Prague Modernism of the 1920s.

With Sustainability Towards the Future

Sustainability will also play an important role in the group’s future development. To mark its 35th anniversary, Zátiší Group has become the first hospitality company in Central Europe to receive the internationally recognised B Corp certification. Awarded by the non-profit organisation B Lab, the certification recognises companies that meet high standards in sustainability, social responsibility, transparency and responsible corporate governance. Members of the global B Corp community include Patagonia, Ben & Jerry’s, Jamie Oliver Group and Chloé.

"Our goal for the next 35 years is to continue creating the WOW moments that have always been part of our DNA," says Suri. "At the same time, we want to do so with an even greater sense of responsibility towards the planet and the communities around us."

With its anniversary, Zátiší Group is not only looking back on its influential role in Czech gastronomy, but also positioning itself for a new phase: closer to the everyday lives of its guests while continuing its ambition to help shape modern hospitality in the Czech Republic and beyond.
