BURSA by Zátiší Group to Open in Prague-Holešovice at the End of 2026

The modern restaurant combines Czech pub tradition with open-fire cooking, its own bakery and versatile event facilities

With BURSA by Zátiší Group, Prague Market Hall will gain a new destination for modern Czech cuisine at the end of 2026. Alongside the restaurant, flexible spaces are planned for events with up to 800 guests.

A major new gastronomic project is taking shape at Prague Market Hall in Holešovice (Holešovická Tržnice). In late November or early December 2026, the Zátiší Group will open BURSA, its modern Czech restaurant concept, at the site.

With BURSA, the Zátiší Group aims to appeal to a broader audience in the upmarket yet accessible dining segment. The new concept will offer a contemporary interpretation of the traditional Czech pub and accommodate around 300 guests.

The culinary offering will range from meat dishes prepared over an open fire or on the grill to high-quality dry-aged meat, baked goods from the in-house bakery and vegetarian alternatives. Alongside tank Pilsner Urquell, beers from smaller breweries will also be served.

The restaurant will be open throughout the day. Guests will be able to enjoy breakfast or lunch there, or spend the evening over good food and freshly tapped beer. The design concept draws inspiration both from the history of Prague Market Hall and from Prague Modernism of the 1920s.

Flexible Event Spaces for Events of Any Size

In addition to its regular restaurant operations, BURSA is also intended to serve as an event venue. The flexible indoor spaces will offer seating for up to 350 people. A further 200 seats, along with grills, bars and a food zone, are planned for the courtyard.

The offering will range from smaller team dinners for around 20 participants to large corporate events. A direct connection to neighbouring Hall 13 will allow events with up to 800 guests to be held. Dedicated parking facilities will also be available for larger events.

For the new restaurant, the company is relying on an experienced team and local suppliers. The opening is planned for late November or early December 2026.

The Zátiší Group has been active in the Czech gastronomy market for more than 35 years. Since its establishment, it has developed into one of the country’s most established restaurant groups and is among the best-known names in Czech fine dining.
